Job Description

WORK CONTENT:
- Manage and control work in the kitchen department
  • Directly disseminate new regulations and information from superiors to employees in the department, ensuring accuracy and timeliness.
  • Assign work to staff in the Kitchen Department
  • Plan spending and ordering, then divide work among related positions
  • Control the staff's working process, ensuring proper implementation of the restaurant's standard procedures
- Plan menus, set out cooking specifications and food quality
  • Responsible for planning and creating menus;
  • Assign and assign specific tasks to staff (kitchen assistants)
  • Set out processing specifications and provide professional guidance to kitchen staff on the process of preparing dishes to meet customer service standards.
  • Ensuring food quality after processing; Directly check the quality of the food before sending it to the service department
- Manage goods and materials in the kitchen
  • Inventory the quantity and quality of imported goods
  • Check the quality of foods and raw materials available in the kitchen
  • Check the quality of stored foods and spices at the end of the work shift for appropriate storage, processing and handling instructions
  • Make a decision to destroy food and goods that do not ensure quality
- Ensure hygiene and food safety standards
  • Responsible for controlling hygiene quality in the entire kitchen space
  • Organize employees to clean the work area, tools and equipment used in the kitchen according to proper procedures.
  • Ensure the hygiene quality of dishes before serving to guests
  • Carry out food sample storage
- Manage tools and assets of the kitchen department
  • On a monthly basis, coordinate with the accounting department to inventory assets, machinery, tools and equipment in the kitchen
  • Instruct and monitor the use and preservation of assets, machinery, and kitchen tools of employees
